It’s been a bit, eh?

In the midst of all of the things going on in my life, Craig and I managed to make it to the local gym to get a membership.  Ohhh, about 25 pounds overdue.  Meh, can’t dwell on where I’ve been, just on where I’m going, right!?

In addition to that, with the encouragement of my buddy Kim, I’m also gearing up to try the 24 Day Challenge by Advocare.  I’ve heard really great things about it – and like Kim, I was super hesitant until I found someone “in real life” that had success with it.  Kim is about half way done with her challenge (go girl!) and her motivation and results was the last push I needed to give it a go!

Starting next weekend – I haven’t decided on Saturday or Sunday – I’ll start my challenge!  That means I will be done on March 17th or 18th – and that means I’ll still be able to enjoy my birthday on the 19th!  Timing is everything, folks!

Yesterday, while grocery shopping, I tried my darndest to stick the perimeter.  It’s all those isles in the middle that tend to get me into trouble.  Lots of fresh produce made its way into my cart.  I’m starting some healthier habits this week, so when it’s time to “get serious” come next weekend, I’ll have a week of transition under my belt!  Setting myself up for success as much as I can!

In the spirit of that, for dinner last night I pulled out a spaghetti squash.  I love these buggers.  So easy to prepare and so good!

What’s In It?
  • ½ spaghetti squash
  • 2 Tbs butter, browned
  • 1 tsp basil
  • 1 tsp parsley
  • ½ tsp sage
  • salt & pepper to taste
The How To
  1. Prepare your squash. You can do it ala microwave in 8 minutes or wait your entire life (about 45 minutes at 375) to do it in the oven. I choose microwave. Every time. After cooking/baking your squash, let it sit for a couple minutes before scraping out the goods.
  2. Brown your butter.
  3. Once browned, mix in the herbs.
  4. Add spaghetti squash and heat for an additional couple minutes.
  5. Use tongs to move your delicious meal back into the skin of the squash (fun little bowl, hey!) and enjoy!

Yes, I realize that 2 tablespoons of of butter isn’t really the definition of “healthy,” but it’s a serious improvement over the meals I’ve been eating on the regular thanks to being out of town for work.

Speaking of which, I have the pleasure of driving to and from Madison, Monday through Thursday this week.  Oh AND they’re calling for 4-6 inches of snow today.  How does that commute sound? How much do you think it will add to my hour-forty-five commute each way?  I’m guessing…about an hour?  Son of a…
